A Doc Green’s is coming to Derby.
The eatery will open Aug. 15 at the Town Square at The Oaks strip center, which is at 2307 N. Rock and just north of Braum’s. The center is now under construction but will be ready for business by August. The 3,170-square-foot restaurant will be similar in appearance to the concept’s College Hill location, but larger.
“We feel that’s our model for the future,” said Scott Kuthan, who owns Doc Green’s Gourmet Salads and Grill along with his wife, Tammi.
Kuthan said they’re looking forward to being in Derby.
“We’re real excited,” he said. “Derby has been on our wish list.”
He cited a growing market and its demographics, including housing growth. The Kuthans also like the economic impact of McConnell Air Force Base on Derby along with the thought of traffic flow from the upcoming dinosaur park just north of the location.
Doc Green's has a variety of food with an emphasis on a “good healthy product,” Kuthan said
“We say it’s as healthy as you want to be,” he said.
There are salads and wraps, but also meat and gravy.
Kuthan termed the concept “fast causal,” not unlike Chipotle.
Doc Green’s started off as a franchise and while that folded, the couple keep it going as an independent company.
“We took off with the concept,” he said. There is one other Doc Green’s, which is in the Atlanta area, but it is not related to this business.
The couple now have three locations in Wichita.
